Apple Cider Caramel

Add a half gallon of apple cider to a pot and bring it to a boil.
Reduce the heat to medium low and simmer until the cider is reduced to a thick molasses consistency.
Lower the heat further and add half a cup of butter in small cubes, stirring slowly.
Once the butter is melted, add half a cup of room temperature heavy cream slowly while whisking.
Increase the heat to medium low and whisk until the mixture is creamy.
Pour the mixture into a jar and refrigerate.
1/2 gallon apple cider
1/2 cup butter
1/2 cup heavy cream
